Summary
The first iOS build of the new Ahad Pay app (profile `development`) failed in INSTALL_DEPENDENCIES: `pnpm install --frozen-lockfile` → `ERROR packages field missing or empty`. pnpm 9.12.3 rejects our `pnpm-workspace.yaml` (only `patchedDependencies`).
Bumps the pin on production / development / simulator / ui to 10.12.3, matching `packageManager` and the staging profile, which already builds with it. Lockfile is v9.0 written by pnpm 10.
